This lazy cake is made without cacao. I have used walnuts, apricots, condensed milk and biscuits in this lazy cake recipe. Chocolate fans might be disappointed, but after tasting it, I’m sure they will ask for more. Caramel is the tastiest thing in the world. This recipe for lazy cake is my favorite. You can choose your favorite nuts and dried fruits. It is a matter of personal choice. Besides, you can make vegan lazy cake version.
In college, I usually had free time between lectures. I spent it hanging out with my classmates. Once my classmate offered me a no-bake biscuit cake she made at home. Her cake was made from biscuit crumbles, butter, condensed milk and cocoa powder. It’s the original lazy cake. It is sweet, rich and so yummy. I kept her recipe and came up with my own version later. Mine tastes like caramel, because it’s cocoa-free and I would say less sweet. It’s because I used less cookies and added more nuts and dried fruit instead. So it’s the healthier version. No-bake cookie cake can be shaped like a cake or a salami.
I use organic vegan shea butter instead of regular butter. Also I use less condensed milk, half what’s in the original recipe. More dried fruit instead of cookies. However, it would work perfecty if you use regular butter or any other dried fruit you have on hand.
Butter acts like the glue, keeping all ingredients together and holding on everything. You can use regular butter. If you are lactose intolerant, vegan butter would be the perfect choice.
Condensed milk makes the lazy cake creamy, soft, and moist. It gives an amazing caramel flavor. If you are looking for lactose free alternative, choose sweet condensed coconut milk.
I like apricots, so I use them. Soft apricots are best. If it is too dry, soak it for half an hour in warm water. You can use any dried fruit you have on hand. Be creative, don’t be shy. Experiment untill you find your perfect match.
Walnuts pair well with caramel. This match is absolutely amazing. Hazelnuts or pecans also good alternative.
Tea biscuits. You can use “Goya Maria cookies” style biscuits or digestive biscuits, graham crackers, or any other biscuit you like! You can also use less biscuits and add other ingredients instead. Keep in mind that if you overload the batter with biscuits, your cake will fall apart.
Break the biscuits into small pieces and place them in a bowl. Finely chop the apricots or any other dried fruit of your choice. The kind I buy is quite soft so I don’t need to soak them. Chop walnuts. In the meantime, place a small saucepan on the low heat and melt the whole butter. Just don’t let it boil.
Once the butter is melted, add chopped apricots and nuts to the butter pot. Mix everything with a wooden spoon. Pour in a half can of condensed milk. Then take a wooden potato masher and mash everything a bit so that the cookies crumble even more and soak the butter. After that, mix everything up again.
Next, put the butter in plastic food wrap and form a long, thick sausage. Tightly fold the edges and transfer to the fridge. Leave it overnight. Enjoy the next day!
Most people make this no-bake biscuit cake with chocolate. All you need is to substitute nuts and dried fruit for biscuits and add cacao powder.
All you need is to substitute fried fruit and nuts for cottage cheese. Make sure you drain the cottage cheese properly. Dried cranberries is a good combo.
Using vegan butter and coconut milk, you can have vegan lazy cake version.
You can store it up to 6 days in the fridge. Keep it in the airtight container.
