Today I’m sharing my favorite spelt flour banana bread recipe! It is absolutely delicious. Healthy banana bread fits every occasion. I made it using various recipes and variations… and I have a winner – the recipe that I have improved. My family loves it. It is moist, loaded with bananas, butter, and toasted walnuts or pecans.
As the weather gets colder, we all crave something freshly baked that is warm and comforting. I’m sure this quick, easy spelt banana bread would please any sweet tooth!
I bake it in a loaf or bundt pan. I guess it depends on my mood and occasion. Whenever I want to serve a nice cake, I use a bundt pan, and when I want to look it like a bread, I use a loaf.
If you are guessing the measurements for the loaf, I suggest 9.4 x 4 inches/24×10 cm and 9-inch bundt pan.
Bananas: It is best to choose over-ripe bananas, as it gives extra sweetness and moisture. The peel should be at least half brown. Go for organic fruits. I always choose them.
Eggs: Choose free-range eggs or find a local farm near your home.
Sugar: I like cane sugar.
Cinnamon pairs perfectly with bananas’ moisture and gives them a delicious flavor. Cinnamon’s aftertaste makes the whole thing taste amazing.
Cloves pair well with cinnamon. Make sure you use ground cloves.
Butter: As my kids are lactose intolerant, I use vegan butter. The butter adds richness and moisture as well as bananas.
Flour: I use organic spelt flour. I found an organic farmer and purchased spelt grains from him. I’m sure my spelt flour is glyphosate-free. You can use all-purpose flour if you have it on hand.
Nuts: Pecan, walnut, hazelnut.
½ cup +1 tbsp (125 g) butter
¾ cup – 150 g raw cane sugar (I use less, about ¼ cup (60 g))
2 free-range eggs
1 + ¼ cups (200g) white spelt or all-purpose flour
4 -5 ripe bananas
1 teaspoon baking Powder
1 teaspoon cinnamon
1/2 teaspoon cloves, ground
1.Preheat oven to 370 F°/ 190°C. Prepare your loaf pan.
2. Melt the butter.
3. In a mixing bowl, mash the over-ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas.
4. Add the eggs, sugar, and butter to the banana mixture.
5. Mix the flour with the baking powder and spices.
6. Sift the flour into the banana mixture.
7. Grease and pour the batter into your prepared loaf pan. Transfer it to the oven.
8. Bake for approximately 35-45 minutes. The top of the loaf should be nicely browned.
9. Let it cool completely before serving.

Spelt grain is also more water-soluble than wheat, which makes it easier for the body to digest.
Spelt flour is a versatile baking ingredient that is light and airy, giving a nutty flavor and light sweetness to baked goods. You can use spelt flour in a variety of foods including breads, cakes, muffins and waffles.
You can easily make vegan banana bread if you are a vegan foodie. Use vegan butter and flax eggs in place of eggs. To make 1 flax egg, mix 1 tablespoon ground flaxseed meal with 3 tablespoons of water. Mix together, and let sit for about 15 minutes or so. It has to set up and thicken. You can leave it for up to 30 minutes. 2 flax eggs equal to 2 eggs – 1:1 ratio. You need 1 flax egg for every regular egg in a recipe.
