German herring salad

German herring salad is made of pickled beets, homemade pickled herring, apple, onions, boiled carrots and potatoes, mushrooms(the best choice is pickled boletus mushroom or chanterelles) and mayo. Pickled herring salad is perfect for Christmas, Holiday season or Easter. You’ll love it, I promise!

This salad is popular all over the Europe, not just in Germany. I made it first time this year.  It’s quite similar to dressed herring salad, but it taste fresher and I like it more.

German herring salad recipe

  • 15.5 oz / 500 g pickled diced or grated beets
  • 1 pickled herring cut in bite-size pieces
  • 1/2 onion
  • A handful of pickled boletus mushroom or chanterelles (drained)
  • 1 big apple
  • 2 medium carrots
  • 2 medium potatoes
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 4 big tablespoons mayo

How to make pickled herring salad

  1. Wash 2 potatoes and 2 carrots. Add them to the medium-sized pot and boil. Carrots for 20 minutes., potatoes for 30 minutes.
  2. Drain and set aside to cool. Then peel and dice.
  3. Drain pickled beets. Dice or grate (it’s up to you) and add to the salad bowl.
  4. Peel, remove the seeds and grate the apple.
  5. Dice the onion.
  6. Add drained mushroom.
  7. Slice the herring into bite-sized pieces and add to the salad bowl.
  8. Add salt, pepper, mayo and mix everything.
  9. Garnish with parsley on top. You can keep it in the fridge up to 2-3 days.
