Vegan Avocado Salad with Tomato

Vegan avocado salad with tomato and celery is the result of experimentation. It is perfect when the weather turns cold. I wanted something cozy and nutritious, but at the same time refreshing. I had tomatoes, avocado, celery and kale leaves. This salad goes great with special guacamole seasoning, which you can make yourself. It turned out to be a winning combination. My very own young food critics tasted it and raved about how delicious it was.

Ingredients needed for a vegan avocado salad

2 medium size tomatoes

2 celery stalks

1 avocado

2 small kale leaves

2 tablespoons guacamole seasoning

6 tablespoons neutral taste organic crushed tomato (tomato pasta)

3 tablespoons agave syrup

How to make a vegan avocado salad

1.Cut the tomatoes into fine pieces.

2. Cut the avocado and remove the seed.

3. Wash and chop the celery stalks.

4. You’ll need scissors to snip the kale leaves.

5. Sprinkle guacamole seasoning, drizzle with agave syrup, mashed tomato sauce. Mix everything well.

Salad with tomatoes is a healthy, simple, colorful and low-calorie snack. You can serve the salad with tortilla chips. Serve immediately. Enjoy!

Tomatoes

Tomatoes are rich in antioxidants, carotenoids: lycopene, beta-carotene and lutein. Also flavanones and flavonols (rutin, quercetin, kaempferol). These names sound unusual to me. However, scientific studies have proven that these substances have a neutralizing effect on the aging of the body, oxidative stress, cancer, atherosclerosis, skin aging and cardiovascular diseases. In addition, they prevent the accumulation of free radicals.

1 kg of raw tomatoes contains about 500 mg of various antioxidants: 160-240 mg of vitamin C, 10-200 mg of carotenoids (in total), 30-50 mg of phenolic acids, about 10 mg of vitamin E, 20-60 mg of flavonoids, 0.1- 0.4 mg of folate and also a small amount of minerals: potassium, selenium, zinc and copper.

Avocados

Avocados are a great source of fat, protein and carbohydrates. They contain folic acid, vitamin C, group B vitamins and fat-soluble vitamins A, E, K. Avocados are also sources of omega-3 and omega-6 fatty acids. They contain minerals: copper, potassium, magnesium. Besides, avocados are a source of fiber and monounsaturated fatty acids.

Celery

Celery contains vitamin C, beta carotene, and flavonoids, but there are at least 12 additional kinds of antioxidant nutrients found in a single stalk. It’s also a wonderful source of phytonutrients, which have been shown to reduce instances of inflammation in the digestive tract, cells, blood vessels, and organs.

Kale

Raw kale contains Vitamins: A from beta-carotene, K, C, B6. Also Manganese, Calcium, Copper, Potassium, Magnesium. It also contains small amounts of vitamin B1 (thiamin), vitamin B2 (riboflavin), vitamin B3 (niacin), iron and phosphorus.
