Asian cucumber carrot salad is always a good choice when you want something in the evening but don’t want heavy food.
What are the health benefits of raw cucumber carrot salad?
Carrots contain many biologically active compounds, or phytochemicals, which are associated with multiple health benefits. Easily digested, carrots contain vitamins C, D, E, B, calcium, iron, magnesium and a lot of carotene.
Sesame seeds are rich in magnesium, calcium, phosphorus, zinc, selenium, iron, vitamin B1 and useful fiber. Sesame seeds are characterized by two unique substances with cholesterol-lowering properties: sesame and sesamolin. As a result, sesame seeds in salads stabilize blood pressure and provide the body with vitamin E. They are healthy and nutritious. Sesame seeds and oil will give a delicate nutty flavour. Lime juice will add vitamin C to your body. You can also use this cucumber salad dressing recipe to dress other salads or main dishes.
Cucumbers are considered extremely low-calorie foods made up of 96% water. 100 grams of cucumber add up to just 45 calories. They are packed with minerals, dietary fiber and other vitamins which are very effective at losing weight.

Agave syrup consists of monosaccharides (predominantly fructose and some glucose), water, and small amounts of other carbohydrates, fat, polyols, vitamins and minerals. What’s the difference between honey and agave? Honey is definitely the healthier choice if you are deciding between honey vs agave. It is primarily made up of fructose, whereas agave has more significant amounts of glucose. Honey offers a wide variety of health benefits not found in any other natural sweetener.
Flaxseed oil, which comes from flaxseed, are rich sources of the essential fatty acid alpha-linolenic acid — a heart-healthy omega-3 fatty acid. Flaxseed is high in soluble fiber and in lignans, which contain phytoestrogens.
Soy sauce. Despite being low in calories, soy sauce is extremely high in sodium which can leave you bloated and increase the risk of hypertension. There are many low-sodium soy sauce options available these days but they are not significantly less salty than regular ones. Use sparingly.

How to make Cucumber Carrot salad
Cut fresh carrots and cucumbers into straws. If you don’t have this type of grating board, buy it and you will make salads quickly and easily with it. Be careful not to cut your fingers when chopping carrot tips. Add a generous portion of sesame seeds. If you don’t have time to roast them, just put them in a bowl of salad that has already been prepared. In a separate bowl add sesame, olive oil, a bit of soy sauce, agave syrup, crushed garlic (if you don’t like spicy, skip it), lime juice if you want some acid. Mix the salad, sesame and sauce well and sprinkle with more sesame seeds on the top. Your cucumber carrot salad is ready.
Sometimes I mix sesame oil with freshly squeezed flaxseed oil. The taste of fresh oil is completely different from those in stores. You should try it. When I use flaxseed oil, I don’t add soy sauce and use salt instead. It’s a really good combination.
How to store cucumber carrot salad?
Serve it fresh, if possible. Cucumber and carrot salad has a shelf life of about two days when stored in a sealed container in the refrigerator. If you’re concerned about color and texture, make sure to keep this salad for a maximum of one day.
